Everybody loves Guacamole
Everybody loves Guacamole. Everybody makes Guacamole. Everybody has their own version of Guacamole.
And, everybody thinks their version is the best. Well, I’m like everybody and I’m pretty sure my version kicks even Chipotle’s Guaca’s… well, let’s say backside (Creating a family blog here).
The best Guacamole that I’ve ever had, however, was during our four day gruelling trek to the Machhu Pichhu… The Inca Trail. Our porters, who also doubled up as skilled cooks, whipped up this amazing version of Guacamole from the large avocado they found lying on our way one afternoon. That version had heaps of Queso cheese in it and was largely unmarred by too many ingredients.
My version goes heavy on everything nice, a big punch from the Jalapeno chillies, a bigger dash of freshness from the cilantro and an earthy spiciness from cumin. Add to that, just a dash of Greek yoghurt, amongst other things and you will have a winner in your hands.
I have always had my Guacamole with corn chips. And sometimes with toasted bread (when the husband claims the corn chips mysteriously vanished from the kitchen storage). However, in the quest for gluten-free and healthy, I chanced upon this beautiful recipe for carrot chips. Toasty, crispy and yet healthy, you have got to make them to appreciate the ease of making them and how well they go with a Guacamole.
